Double Blessed Roast Beef Casserole “Stuff”

1 4 lb. Rump Roast
2 cups Kraft® Shredded Cheddar Cheese
1 Tbl. Parsley
1 Tbl. Cumin
1 tsp. Chili Powder
2 packages of Brown Gravy (McCormick®)
Pinch of Red Pepper flakes
Salt and pepper to taste
4 Corn Tortillas
1 white onion for flavor

Cut Roast into slices about 1-2 inches thick and
put in Slow Cooker for 4-5 hours(until it falls apart)
Half way through use two forks to tear apart.

Preheat oven to 350°
Prepare Brown Gravy mix according to the directions on package.
In a 8X8 pan spray with PAM or equivalent (cleans up easier)
Fold the 4 tortillas in half and layer flat side up against the edge of pan and pour gravy to cover bottom of the pan. Set aside.

Roast, 1 cup of Cheddar cheese, Parsley,Cumin and Chili Powder. Pour into pan,top with remaining cheese and Gravy on the top. Put in oven and bake about 20 minutes, just long enough to melt the Cheese!

Note: Serve with your favorite Tortilla chips.

Every recipe has a history, this was started from leftover pot roast. I like experimenting with recipes, this has survived all of my experiments. I looked at the leftovers while washing dishes, and I kept looking at it until  “Stuff” was born. The second time was by request from my Dad to make “Stuff”. This post is to honor him, and in memory of Mom, who encouraged my cooking experiments.
